Cayeye is an exquisite puree made from green bananas and presented with sides of costeño cheese and butter, but it is possible to add other items too.

Ingredients

  • Water
  • Salt
  • 3 green bananas
  • Vinegar
  • Costeño cheese to taste
  • Butter

Preparation

First, place a pot or saucepan in the kitchen, fill it with water, and add a ½ tablespoon of salt. While waiting for the water to boil, remove the skin of the bananas then cut them into sections. Remove each layer of the peel and then place the fruit in the boiling water. Add a tablespoon of vinegar to avoid oxidation, cover the container and let them cook until their texture is very soft.

Afterwards, remove them from the container, place them on a plate and crush them with a fork until they have a smooth and light texture, some people add a little water to the mixture to give it a creamier consistency. Once the puree is ready, add the previously grated cheese, butter and finally a little more cheese.
